Abstract
Ječmena trava predstavlja ranu fazu razvoja ječma. Bogata je mnogim bioaktivnim komponentama i antioksidansima. Niska temperatura utječe na rast i razvoj biljaka te može izazvati nastanak oksidativnog stresa što dovodi do biokemijskih i fizioloških promjena u biljkama. U ovom se istraživanju ispitivao utjecaj niske temperature na nutritivni sastav i antioksidativna svojstva u dvije sorte ječma, Dado i Matej. Nakon izlaganja stresu niskom temperaturom u klijancima se izmjerila koncentracija askorbinske kiseline, vodikovog peroksida, fotosintetskih pigmenata, ukupnih topivih polifenola, proteina, produkata lipidne peroksidacije, aktivnost enzima gvajakol peroksidaze i ukupna antioksidativna aktivnost. Istraživanje je pokazalo da niska temperatura izaziva oksidativni stres u obje sorte te mijenja sastav bioaktivnih komponenti. Odgovor na stres razlikuje se između sorti, a sorta Dado nakon tretmana pokazala je jaču ukupnu antioksidativnu aktivnost.
Abstract (english)
Barley grass represents the early stage of barley development. It is rich in many bioactive components and antioxidants. Low temperature affects the growth and development of plants and can cause oxidative stress, which leads to biochemical and physiological changes in plants. In this study, the influence of low temperature on the nutritional composition and antioxidant properties of two varieties of barley, Dado and Matej, was examined. After exposure to low temperature stress, the concentration of ascorbic acid, hydrogen peroxide, photosynthetic pigments, total soluble polyphenols, proteins, lipid peroxidation products, guaiacol peroxidase enzyme activity and total antioxidant activity were measured in seedlings. Research has shown that low temperature causes oxidative stress in both varieties and changes the composition of bioactive components. The stress response differs between varieties, and the Dado variety after treatment showed a stronger total antioxidant activity.
