Abstract
Pšenica pripada u grupu „velike trojke“ žitarica i uzgaja se u više od 120 zemalja. Najbolji pokazatelj kvalitete zrna pšenice je koncentracija i bioraspoloživost mikroelemenata cinka (Zn), željeza (Fe) i kadmija (Cd). Budući da fitat (PA) prisutan u zrnu pšenica kelira navedene minerale, upravo je molarni omjer PA/Zn i PA/Fe dobar pokazatelj njihove bioraspoloživosti. Ovim istraživanjem utvrđena je sortna specifičnost u akumulaciji Fe, Zn, Cd i PA u zrnu pšenice. Sorte s najboljim karakteristikama u pogledu bioraspoloživosti Zn i Fe su hrvatska sorta Tena i japanska Saitama 27. Koncentracije Cd u svim istraživanim sortama su bile ispod maksimalno dopuštenih vrijednosti. S obzirom da je niska bioraspoloživost elemenata kod većine istraživanih sorti rezultat visoke koncentracije PA, a ne niske koncentracije mikroelemenata, u budućnosti bi glavni cilj oplemenjivača trebao ići u smjeru smanjenja koncentracije PA u zrnu.
Abstract (english)
Wheat belongs to the "big three" cereal crops and it is grown in more than 120 countries. The best indicator of wheat grain quality is the concentration and bioavailability of microelements zinc (Zn), iron (Fe) and cadmium (Cd). Since phytate (PA), present in the wheat grain, acts as a chelator of these minerals, the molar ratio PA/Zn and PA/Fe is a good indicator of their bioavailability. This research has determined the species dependent differences in the accumulation of Fe, Zn, Cd and PA in the wheat grain. Varieties with the best characteristics regarding the bioavailability of Zn and Fe are the Croatian Tena and Japanese Saitama 27. Concentrations of Cd in all investigated varieties were below the maximum permissible values. Given that the low bioavailability of most of the investigated varieties results from a high concentration of PA and not a low concentration of microelements, in the future the main objective of the breeder should be to reduce the concentration of PA in the grain.
